But it also causes the most angst as it takes so long to cook, taking up your whole oven. And the breast meat has tendency to be dry if not properly tended. The first step is to make sure that your turkey is completely defrosted if it is frozen. Leave to thaw out for 24 hours in the fridge, not on a work top. Next, check the weight of the turkey before removing the packaging and giblets and pat the turkey dry with kitchen paper. Categorically do not wash the turkey in the kitchen sink!
