Chicken Reggies

Ingredients

  • 30g Avonmore Butter
  • 1 onion chopped
  • 1 celery stick
  • 1 sweet pepper chopped
  • 1 chille chopped
  • Approx. 10 button mushrooms
  • 3-4 boneless chicken breasts cut into bite size pieces
  • 1 tsp basil
  • 1tsp oregano
  • Salt and pepper to taste
  • 1 can of crushed tomatoes
  • 1 cup of tomato sauce
  • 1 cup of chicken stock
  • 1/2 pt of Avonmore cooking cream
  • 1 cup Parmesan cheese

Directions

  1. Saute the chicken for 15min set aside.
  2. Saute all the veg add the herbs and put back the chicken.
  3. Now add 1 can of crushed tomatoes,1 cup of tomato sauce.1 cup of chicken stock,1/2 pt of Avonmore cooking cream and 1 cup Parmesan cheese.
  4. Simmer for 30-40min and serve over Regatoni Pasta.
  5. This is why I call it Chicken Reggies
