Chocolate Fudge Brownies – Durcas Barry

  • 300g of mixed nuts (walnut, brazil and almond)
  • 300g cup of fresh dates
  • 50g cocoa powder
  • 4 tablespoons of cashew butter
  • 2 tablespoons of mixed ground seeds (such as linwoods)
  • 1 tsp. vanilla extract
  • pinch of sea salt


  1. Process all of the nuts together in a food processor to a chunky size and then add the dates one by one while still processing.
  2. Add the other ingredients and then give a quick pulse to combine.
  3. Press the mixture into a lined baking tray and then cut into slices in the tray.
  4. Place in the freezer unti needed, they can be served from frozen.
