Christmas spiced cupcakes

These cupcakes will get you in the Christmas mood!

Ingredients

    For the cupcakes:

    • 110g/4oz soft Avonmore Butter
    • 110g/4oz caster sugar
    • 2 free-range eggs
    • 1 tsp Vanilla Extract
    • 110g/4oz self raising flour
    • 1 tsp mixed spice
    • zest of 1/2 an orange
    • 1-2 tbsp milk

    For the icing:

    • 50g Icing Sugar
    • 200ml Avonmore Freshly Whipped Cream
    • 1/2 tsp vanilla extract
    • zest of 1/2 an orange

    Directions

    Preheat the oven to 180C and line fairy cake tins with paper cases.

    1. Cream the Avonmore Butter, zest and sugar together in a bowl until pale.
    2. Beat in the eggs, a little at a time, and stir in the vanilla extract.
    3. Fold in the flour and spice.
    4. Add a little milk until the mixture is a soft dropping consistency and spoon the mixture into the paper cases.
    5. Bake in the preheated oven for 12 minutes.

    For your icing:

    1. Add the whipped cream to the sieved icing sugar.
    2. Add the orange zest and 1/2 teaspoon vanilla extract and combine.

    To assemble, when the cakes are completely cool, pipe the icing on top using an icing bag and a swirly nozzle.  Decorate with a little mixed spice sprinkled on top.
