Vanilla Cheese Cake

Here’s a great dessert for you to impress your guests or for a real family treat


  • 50g Avonmore Butter (melted)
  • 600g cream cheese
  • 9 digestive or easy to crumble biscuits
  • 2 tablespoonfuls of cream (plain) flour
  • 175g caster sugar
  • 1 teaspoon of vanilla extract
  • 3 eggs (omit white from one by removing yolk – retain yolk)
  • 142ml of Avonmore Sour Cream
  • 300-400g tinned or fresh rasperries or strawberries
  • Icing sugar
  • Tub of Avonmore Freshly Whipped Cream


Blend biscuits in a food processor
Mix with melted butter
Place in a round baking tin – press down firmly
Bake for 5 minutes (180c fan oven) and let to cool
Mix cream cheese with flour, sugar, vanilla extract
Beat the eggs and add to the mixture
Then add in the Avonmore soured cream
Finally stir in the fruit
Bake for 40 minutes and let to cool
Mix remaining fruit with icing sugar and heat
Finally using a blender whisk so that it can be poured over the cheesecake
Keep a few pieces of the fruit for decorative purposes
