Apple & Cheese Salad with French Dressing


  • 150-200g Mixed Salad leaves (such as Baby Leaf, Rocket, Ruby Chard, Frisee, etc.)
  • 12 Vine Ripened Cherry Tomatoes, halved
  • 100g Avonmore Light Grated Cheese
  • 1 small Red Apple, chopped
  • Toasted Pine Nuts, Hazelnuts or Walnuts (Optional)


  • 3 tablespoons of Extra Virgin Olive Oil
  • 1 tablespoon of Balsamic Vinegar
  • 1/2 teaspoon Dijon Mustard
  • 2 teaspoons freshly chopped herbs (such as Parsley, Chives, Basil)
  • Salt & Cracked Black Pepper to season


1. Wash & dry salad leaves & arrange in a bowl
2. Add cherry tomatoes, apple and nuts, if using.
3. Add Avonmore Light Cheese to the salad bowl.
4. Mix the ingredients for the dressing in a small cup, then, just before serving, toss the salad in the dressing.
5. Serve with warm, crusty bread.
