Heat the oil in a wok, add beef and stir fry till brown. Sprinkle with fajita seasoning mix and cook for 1 minute. Add the limejuice, peppers and onions and cook for a further 5 minutes adding in a little water if necessary
To heat flour tortillas, place one on a hot dry frying pan and cook for 30 seconds on either side. Repeat with the remaining tortillas.
Fill each tortilla with a handful of shredded iceberg lettuce, ¼ of the fajita mixture, 1 tablespoon of salsa (see below) and 1 tablespoon of sour cream & some sliced beef.
Roll up tortillas and serve with a green salad.
Homemade Salsa Dip
Drain tomatoes, reserving only 1/4 cup of the juice.
Combine tomatoes and juice with remaining ingredients; cover and chill at least 4 hours
