Beef Fajitas

Spicy, tender Mexican style family favourite dish. Use as a snack or main meal.


  • 250ml (6 fl. Oz) Avonmore Sour Cream
  • 1 tablespoon vegetable oil
  • 4 x 170g (6oz) sirloin steak
  • Juice of 1 lime
  • 1 packet of fajita seasoning mix
  • 1 red pepper, de-seeded and sliced
  • 1 yellow pepper, de-seeded and sliced
  • 1 medium onion, chopped
  • 4 flour tortillas
  • ¼ iceberg lettuce, shredded

Homemade Salsa Dip

  • 2 cans (14.5 oz each) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1/4 cup thinly sliced green onion
  • 1/4 cup chopped fresh parsley or mixed herbs
  • 2 tbsp lemon or lime juice
  • 1 clove garlic, minced
  • Black Pepper to taste


  1. Heat the oil in a wok, add beef and stir fry till brown. Sprinkle with fajita seasoning mix and cook for 1 minute. Add the limejuice, peppers and onions and cook for a further 5 minutes adding in a little water if necessary
  2. To heat flour tortillas, place one on a hot dry frying pan and cook for 30 seconds on either side. Repeat with the remaining tortillas.
  3. Fill each tortilla with a handful of shredded iceberg lettuce, ¼ of the fajita mixture, 1 tablespoon of salsa (see below) and 1 tablespoon of sour cream & some sliced beef.
  4. Roll up tortillas and serve with a green salad.

Homemade Salsa Dip


  1. Drain tomatoes, reserving only 1/4 cup of the juice.
  2. Combine tomatoes and juice with remaining ingredients; cover and chill at least 4 hours
