Chicken & Pineapple Curry

A quick & easy Thai curry. Mild & sweet & packed with flavour!!


  • 400g chicken fillets cut in thin strips 2 medium onions, diced
  • 2 yellow peppers diced
  • 1 x 400g can pineapple cubes in its own juice
  • 200ml Light Coconut milk
  • 100ml of Avonmore Fresh Cream
  • 2 cloves garlic crushed
  • 1tbsp medium curry powder
  • 2tsp ground coriander
  • 1tsp ground turmeric
  • 1 tsp chilli powder
  • 200g easy cook rice


  1. Heat a large non stick pan with some oil.
  2. Add the chopped onion, garlic and chicken and fry together until the chicken is browned.
  3. Add curry powder, coriander, turmeric & chilli powder & stir well, coating the browned chicken with spices for flavor
  4. Add the chopped pineapple & chopped peppers.
  5. Next add the coconut milk and the pineapple juice & stir well. Add half the Avonmore Fresh Cream. Simmer for 10 minutes, stirring occasionally.
  6. Meanwhile cook the rice according to instructions on pack.
  7. When rice is nearly cooked, add rest of cream to sauce & stir.
  8. Taste sauce & add extra curry powder if desired.
  9. Divide rice on to 4 plates & serve with Chicken & pineapple curry to the side or in the centre of the rice.
