Chocolate and raspberry fudge cake

  • 70g Cocoa powder
  • 275 g golden brown sugar
  • 8 tablespoon boiling water
  • 3 eggs
  • 120g in salted butter softened
  • 50 ml buttermilk
  • 180g self raising flour


  1. Beat cocoa powder with boiling water add remaining ingredients and beat well put into two 7 inch cake tins and bake for 20 mins leave to cool before removing from tins.
  2. Meanwhile melt chocolate in a bowl over water when melted add Avonmore double cream and mix well.
  3. Spread some homemade sieved raspberry jam on one side of cake add some of the fudge chocolate place some fresh raspberries on top,top with other piece of cake and smooth remaining fudge mix on top.
  4. Add fresh blueberries and raspberries to top
