Christmas Mincemeat Cake

Mini mince cakes to get you in the Christmas spirit!


  • 75g Avonmore Butter
  • 100g castor sugar
  • 100g/3½oz self raising flour
  • 2 free-range eggs lightly beaten
  • 1 tbsp boiling water
  • ½ teasp vanilla essence
  • Avonmore Freshly Whipped Brandy Cream
  • 4 big tablespoons of homemade mincemeat or a jar of a good quality mincemeat.


Turn on the oven to 180c

Serves 4-6

  1. Cream together the Avonmore Butter and caster sugar until fluffy and light (preferably in a food processor). Add the vanilla essence while in motion.
  2. Add the eggs one by one slowly while the food processor is on.
  3. When all the eggs are mixed in, transfer the mixture to a bowl and fold in the sieved flour.
  4. Add a spoonful of boiling water to the mix if quite dry.
  5. Spread mincemeat into an oven proof dish, greased with Avonmore Butter.
  6. Spoon the mixture over the mincemeat. Cook in the oven for 30-35 minutes or until the top is nice and brown. Test with a cake tester, if it comes out clean of sponge it is ready!

Serve with Avonmore Freshly Whipped Brandy Cream
