Iced Strawberry Meringue Dessert

  • 500ml Avomore Double Cream
  • 300g Meringues, roughly broken
  • 1 Punnet of Strawberries, sliced
  • 50g Icing Sugar
  • 1tsp vanilla extract


  • Blend the strawberries, vanilla and icing sugar in a blender and set aside.
  • Whisk the double cream, fold in the broken meringues, then fold in the strawberry sauce.
  • Pour the mixture into a lined cake tin, wrap in cling film and place in freezer overnight.
  • Remove about 20 mins before serving and cut into slices.
