Oriental Chicken Salad – Durcas Barry

  • 1 cooked chicken
  • 2 peaches, stoned and sliced
  • 100g of sugar snap peas, topped and tailed
  • 4 spring onions, sliced thinly
  • 1 large bunch of fresh coriander
  • 100g bean sprouts

For the Dressing

  • Juice and zest of 1 lime
  • 1 tablespoon of honey
  • 1 inch approximately of ginger, peeled and grated
  • 1 tablespoon of tamari soy sauce
  • 3 tablespoons of rapeseed oil
  • 1 teaspoon of toasted sesame oil
  • ½ red chilli, chopped finely


  1. Strip the chicken of all the meat, keeping the pieces fairly chunky. Place into a large bowl with the peaches, sugar snap peas, and the spring onions.
  2. Mix the dressing ingredients together, starting with the honey and gradually working the other ingredients in.  Toss into the chicken and peach and gently mix until all the ingredients are coated with the dressing.
  3. Serve with a green salad.
