Panfried fluffy potatoes with Sour Cream and Chive Dip

Fluffy pan fried potatoes with a dip packed with flavour


  • 4 medium size floury potatoes (e.g. rooster)
  • 1 tub of Avonmore Sour Cream
  • Avonmore Butter
  • Chopped chives



  1. Peel the potatoes.
  2. Steam until cooked through. Take out and let go cold.  You can use potatoes from the day before if you like.
  3. Slice into chip shapes.
  4. In wide rimmed saucepan melt Avonmore Butter till it sizzles.
  5. Fry the potatoes with the Avonmore Butter until golden brown on all sides.
  6. Serve with a bowl of Avonmore sour cream and chopped chives.
