Pickled Cucumber – Kevin Dundon

  • 1 Cucumber, cut in half lengthways, seeds removed
  • 1 onion, thinly sliced
  • 500ml/18fl oz Rice Wine Vinegar
  • ½ red chilli thinly sliced.
  • 300g/11 oz light brown sugar
  • 1 tsp sea salt


  1. Use a vegetable peeler to pare the cucumber flesh into wafer thin ribbons and place in a pan.
  2. Add the onion, chilli, rice wine vinegar, sugar and salt.
  3. Slowly bring to the boil and simmer for 20 minutes until the vegetables are completely tender and the liquid has reduced.
  4. If you are not using immediately store in sterile kilner jars.
